Ingredients
12 lb. turkey
1 onion
4 sliced carrots
1/2 sliced white turnip
1 small garlic clove
3 slices parsnip
1/2 cup flour
1/2 tsp. pepper
1 tsp. salt
1/2 tsp. nutmeg
3 cups turkey stock
1/2 tsp. lemon juice
2 cups cream or evaporated milk
2 pastry or pastry crusts
Directions
1. Cut turkey into pieces then half cover them with boiling water
2. Add onion, cloves, carrots, turnip, garlic, and parsnips
3. Simmer until the turkey is tender
4. Remove turkey and cool
5. Strain stock; chill and skim off fat
5. Melt 1/2 cup turkey fat then add flour, pepper, salt, and nutmeg;
Blend
7. Add turkey stock, lemon juice, and cream
8. Cook until thickened while stirring constantly
9. Cut turkey into 3/4 inch cubes and add 6 cups diced turkey to the
sauce; Cool
10. Roll pastry (if necessary) and line individual piepans
11. Fill with creamed turky, brush the edges of pastry with water
12. Cover with the top crust and press the edges together
13. Make a few slits in the top crust to allow steam to escape
14. Bake in hot oven at 400F degrees for 15 minutes, then reduce heat
to medium (350F degrees) and bake until browned
