Quarkus MongoDB Panache Optimistic Lock Control

Hello everyone.

I'd like to leverage this moment here, where David Hoffer is facing an issue in MongoDB Panache and ask some questions about a PR that is opened since a long time ago.

Basically, this PR add to Quarkus MongoDB Panache the capability to have optimistic lock control, such as we have in Spring, or in Hibernate.

For sure it is possible that the code is not good enough and needs improvements, and I'm totally ok with that, we can improve it.
