I'm actually creating them now. I must point out that online polars are wildly optimistic. Now if you want Polar for Apparent Wind, its quite a different beast to those for True Wind. True Wind polars are much more useful for Weather routing. Trouble is to get emperical ones requires an understanding of tidal streams, plays hell with leeway and STW. How do you get info on Leeway, well I reckon its proportional to the sine of the Apparent wind * k (for constant) but I could be wrong. Getting data in I use Navmon PC & its transmitted to my W10 lap top via a Vesper AIS (but there are other MUXs), well I can help you with spread sheet manipulation but my data is for my particular vessel, that thou it is a Passport, mine is custom made, and not in Taiwan. My sailplan is a jib bout a #2 and a 31 yo Main.
I have enough data now but need to test it, but the only thing I can say with some certainty is running with freewheeling prop aids my speed, I anticipate that changing to feathering prop will double that, to say half knot at 5.5 knots.
Ask if you want a excel Sample spread sheet.
