1 (1 pound) package Beef Franks, cut into 1/2-inch pieces
1/3 cup finely chopped onion
1 cup sliced celery
3 cups cooked rice
1/3 cup sweet pickle relish
2 tablespoons vegetable oil
1 tablespoon vinegar
1 tablespoon prepared mustard
1 teaspoon salt
1/4 teaspoon ground black pepper
2 hard-cooked eggs, chopped
Cook frankfurters, onion and celery in skillet over low heat until
vegetables are tender but not mushy, then add rice and relish.
Combine oil, vinegar, mustard, salt and pepper. Stir into rice
mixture and cook until hot. Mix eggs in.
