Using a Pre-Defined Gris

I have already created a grid in ArcGIS and have corresponding Environmental Variables for all the grids cells. Is there a way to run Maxent without it looking for Lat and Long?

You need occurrence data and environmental variables to run Maxent, so you will need lat/lon values for those occurrence data. Not sure what you mean exactly.
