that is on the same page.

I agree that the documentation is less-than-ideal, especially when it
comes to 'real-world' applications of the program, but I'd have to
respectfully disagree when you say anti-intuitive, especially in
version 3.

Phone extensions can go in the phone field itself.
Simply type space and an Option-x in the field to get the symbol.

The logic disconnect, as you call it, is because, primarily, Contacts
are people and Organizations are companies (or similar) that those
Contacts work for: you can have a single Organization that employs
multiple Contacts.
That way, you have a single Organization with the primary address,
generic company phone numbers, etc. while the Contacts' details are
things like their home address, mobile number, specific email address,
etc.
To 'relate' a Contact to an Organization, simply drag it from one to
the other; you should get a dialog to assign that Contact a Role within
the Organization (which you edit in Preferences>Roles & Relationships).
Most of the power in Daylite comes from the ability to relate different
areas of information, which goes far beyond a traditional PIM.
You might also want to take a look at the recently-created forums
(<http://forums.marketcircle.com/>), where most of the support traffic
that used to be on this list now finds itself.
