Another summer is around the corner in India. During summer, the hot
sun at noon will raise the temperature over 102º F. The hot-dry-sun is
an optimum environment to cast Indian pickles. The UV rays kill
unwanted bacteria. The high ambient temperature provides 'low
temperature pasteurization', diffuse flavors in the oil. Hot sun is
useful in drying exemplar (items to be pickled), curing exemplar with
salt, and Aging the pickle in a Masala preserve made of spices and
oil.
Even without hot-sun, you can cast comparable pickles in United
States.
