redirects for old pages

I have a client that has some old webpages that are showing up in
SERPs. They want to redirect those to the Home page. Is that the
best way to deal with old pages? If so, 301?

You can set-up redirects in the .htaccess file for specific pages,
directories, etc. If you look up 301 redirect for .htaccess you'll
find some examples and tutorials.

301's are better than the 302 meta refresh since they are permanent
and the search engine will pass on some of the "link juice" those
pages had acquired. Hope this helps.
