Hola Jhon:

Yes, you are right, Spain is a wonderfull country, but at least
you are going to travel for a lot of time, you have to choose an area
to visit, because there are a lot of thing to do and to see in Spain.

If you want to go to the North, this are the most interesting
places:

Santigo de Compostela, Galicia
San Sebastian, Pais Vasco
Barcelona, Cataluña

For hiking, skiing or other winter sport, you have the Pireneus

If you want to go to the center of the country:

Madrid (The capital)
Museo del Prado, Reina Sofia, Tissen
Parque del retiro
Areas to go out: Huertas, Sol, Argüelles, Alonso
Martinez, Chueca (gay area), La latina
Restaurants: Chueca is a good area with a lot of
restaurants, but you can find good restaurants everywhere
Try "El museo del Jamon", is very typical and
very taste
You can visit by train or bus, just one hour away from Madrid:

Avila
Toledo
Segovia

Sistema Central, La pedriza, to go hiking or other
mountains sports

If you want to go to the South:

Granada
Sevilla
Cordoba

Sierra Nevada, to go hiking, skiing and other sport

Depended what do you want to do, you shoul choose one area or
another.

I know more about Madrid, that about other cities as you can see,
but I hope more people from other cities could help you.

Anyway About restarurant there are a lot good restaurants in
Spain, you can eat a menu with entrance, mian plate and desert for
about 10 euros.

Place to going out in Spain, are always easy to find it, because
we like to going out, so just ask to the local people in each city.

Good luck with your typ
