Has anybody ever fished in the Bay of Quinte near Trenton, Ontario? If
so, this not very pro fisherman would love some advice about what to
use and what to catch.

Nope. Sorry, out of my travel league too. But sounds interesting. Please keep us posted as you fish the area! And if possible, send photos.
