Yes well since I started this thread I realize that Google is probably trying to optimize GMail for mobile devices (duh) but I use Gmail on my desktop and laptop. I detest having to mouse over blank areas just to see the available tools. I understand that I am in a small minority- the majority of the world is probably using mobile devices to access GMail.
The problem is for me is that these changes really slow me down. And for some reason this compose experience keeps reverting to italic. Why? Maybe I am hitting some new keyboard shortcut that I don't know about.
I am sorry I love GMail but this may drive me to another mail service. This new compose experience doesn't work for me.

I have been using the Gmail labs version; and so i have hardly even been aware of this new "compose experience". It appears that because I was using the Gmail Labs version, I was not invited to use the new format. My wife (who has not been using the Gmail Labs version) responded to an invitation to the new "compose experience" and likes using it. But I have not bothered.
I wonder if it is still open to people like you to go to the Gmail Labs version and thus stay with the old "compose experience" indefinitely.
But with Google's iterative process in updating all its products, I think that a "permanent solution" may no longer be possible.
See below Eric Schmidt's account of the change model followed by Google, Apple and suchlike.
