FOR THE FROSTING:
1 cup (2 sticks) butter, divided use
2 cups granulated sugar
1/4 cup plus 2 tbsp unsweetened cocoa powder
1/4 cup milk
2 tsp vanilla, divided use
3 1/2 cups powdered sugar
FOR THE BROWNIES:
1/2 cup shortening
1/2 cup strong brewed coffee
1/2 cup Kahlua, Tia Maria or any type coffee liqueur
2 cups flour
2 cups granulated sugar
1/2 cup buttermilk
2 eggs
1 tsp baking soda
chocolate covered espresso beans (optional, for garnish)
Preheat oven to 400 degrees F.
TO MAKE THE FOR FROSTING:
In saucepan, combine 1/2 cup butter, cocoa powder and milk. Bring to
a boil. Stir in 1 teaspoon vanilla and powdered sugar until frosting
reaches proper consistency.
TO MAKE THE BROWNIES:
In another saucepan, combine the remaining 1/2 cup butter,
shortening, coffee and liqueur. Stir, let boil.
In a large mixing bowl, mix the flour and sugar..Pour
butter-shortening mixture over the flour and sugar in bowl. Add the
buttermilk, eggs, baking soda and remaining 1 teaspoon vanilla. Pour
into well buttered 17x1/2 by 11 inch jelly roll pan.
Bake for 30 minutes or until brownies test done in the center...Frost
brownies immediately. Garnish with expresso beans. Let cool until
ready to eat, then cut into bars.
