TROPICAL FRUIT SALAD WITH SPICED RUM SYRUP
For salad:
2 mangoes, peeled, cut into cubes
3 medium bananas, peeled, thinly sliced
2 green kiwi, thinly sliced
1 5- to 6-oz.) package frozen coconut, thawed
1/2 golden ripe extra-sweet pineapple
1/2 cantaloupe, cut into cubes
1/2 honeydew melon, cut into cubes
For dressing:
2 10-ounce cans frozen tropical drink mix, thawed
1/3 cup spiced dark rum
Makes 10 to 12 servings.
Combine fruit and gently stir. Blend together dressing ingredients.
Just before serving, pour dressing over fruit and stir gently to
coat. Serve in a large, clear glass serving dish.
