Mitch Kapor (Lotus 1-2-3 creator for those of you old enough to
remember that pioneering spreadsheet program) is teaching a course over
at UC-Berkeley on open source (course title is the subject of this
post).

He's posted the syllabus
(http://harbinger.sims.berkeley.edu/osdddi/f06/Syllabus) - in wiki
format, no less! - which should provide both a good overview of the
various aspects of OSS, and has opened up the full course forum to
anyone who wants to sign up, so you can follow along with the readings
and assignments.

If you're trying to introduce OSS into your schools, this should be a
good resource to reference and learn from. It might also be a good
topic for students who are interested in more than just playing games
on computers.
