Minute Rice Tuna Casserole

Yield: 6 servings
1 can cream of celery soup
1 1/3 cup Minute rice
2 cans (7 oz) tuna, drained, flaked
2 cups carrots, diced, cooked
2 1/2 tablespoons grated onion
1/2 tablespoon parsley flakes
Combine rice, soup, vegetables, seasonings, meat and salt and pepper
to taste in 2 quart casserole. Stir in 1 1/2 cups boiling water.
Cover and bake at 400F for 15 min.Variation: Tomato soup, 1 1/2 cups
cooked green beans, 3 tablespoons onion, 2 tablepsoons sliced stuffed
olives
