To all my FACS friends,
This is one of the best culinary school demo's I have had visit my classroom.  Chef Chuck is extremely experienced and involves the students in helping prepare the food, teaching them knife skills and culinary basics along the way.  He also focused on the background information for the ingredients as well as a short bio. of Auguste Escoffier who was the "father" of many current culinary practices.  The dish he prepared was very popular with the students, and many of my parents commented that their students came home and fixed the dish for their families.
