I use the Auto-Align and Auto-Blend functions in Adobe CS3 Photoshop.  This is perhaps the best tool I've seen for creating panoramas. 
If you want to take a photo and enlarge it significantly with high resolution do the following:
-take vertical pictures as you would for a panorama i.e. 50% overlap
-join them together and crop to desired (this should end up about the same picture as you would have gotten with one wide angle shot)
You will notice 2 things:
1.  the file is huge  40mb .jpg is normal if 5 photos have been joined
2.  the result will not have the optical distortion of a wide angle shot.
