Noodle Stir-Fry

Metric Ingredient Imperial
175 ml elbow macaroni, cooked according to package directions &
drained 3/4 cup
170 g snow peas, cut lengthwise into halves 6 oz
125 ml carrot, thinly sliced 1/2 cup
5 ml fresh ginger, minced 1 tsp
125 ml yellow pepper, chopped 1/2 cup
125 ml onion, chopped 1/2 cup
50 ml fresh parsley, chopped 1/4 cup
15 ml fresh oregano, chopped 1 tbsp
15 ml butter 1 tbsp
30 ml water 2 tbsp
15 ml soy sauce 1 tbsp

Heat a lightly greased large skillet or wok over medium-high heat.
Add snow peas, carrot and ginger; stir-fry for 2 minutes. Add
peppers, onion, parsley, oregano and butter. Stir fry 2 to 3 minutes
or until vegetables are tender crisp. Stir in water and soy sauce.
Stir in pasta; heat through.

Serves 4
