Salmon with Mango Salsa

~~~Salsa~~~
1 mango, peeled and cut into small cubes
1/2 cup chopped red bell pepper
1/2 cup chopped red onion
3 TB freshly squeezed lime juice
2 TB chopped fresh mint
1 TB finely chopped jalape�o pepper
Salt and ground black pepper, to taste

To prepare Salsa: Toss together mango, bell pepper, onion, lime
juice, mint, and jalape�o pepper in small bowl. Season with salt and
freshly ground black pepper to taste. Cover and chill at least 1 hour
to blend flavors.

~~~Marinade~~~
1/4 cup lemon juice
1/2 teaspoon paprika
Salt and ground black pepper, to taste

~~~Salmon~~~
2 (1 lb. ea.) fillets wild salmon, about 1 inch thick *
1 tablespoon olive oil

To prepare Salmon: Combine lemon juice and paprika in large shallow
baking dish. Season with salt and ground black pepper. Place salmon
in dish and flip to cover both sides. Marinate, covered, up to 1 hour
in refrigerator.

Remove fillets from marinade. Discard marinade.

Heat oil in large nonstick skillet over medium high heat. Sear
fillets 15 minutes, turning once, or until just opaque. Serve with
salsa.

Serves: 6.

* Note: Cut each fillet into 3 pieces.
