250 ml onion, sliced 1 cup
500 ml mushrooms, sliced

250 ml red pepper,
chopped 1 cup

garlic, minced 2 tbsp
30 ml fresh ginger, minced 2

15 ml curry powder
1 tbsp
10 ml ground cumin
2 tsp
250 ml
water 1 cup
In a large skillet;
saute pork over high heat for 3 minutes. Reduce heat to medium; add
onions, mushrooms and peppers. Saute for 5 minutes.
Add garlic, ginger, curry powder, cumin and water. Cover and simmer
on low for 30 minutes.
Serve over rice, couscous or pasta.
