Fresh Fruit Cake

2 oranges
2 cooking apples
2 ripe bananas
2 large eggs
1 1/2 cups sugar
1/4 pound (1 stick) soft butter
3 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons baking soda
3/4 cup golden raisins
3/4 cup chopped walnuts

Cut oranges, with rind, into eight sections; remove seeds. Chop fine in food processor, blender or grinder. Set aside in two-quart bowl. Repeat with apples, peeling the skin if desired. Add to oranges. Peel bananas, cut up and puree or mash. Mix with other fruits.

In large mixing bowl, beat eggs. Gradually add sugar, beating until mixture is thick and smooth. Beat in butter. Add fruits. In one-quart container, stir or shake flour with baking powder and baking soda. Beat flour mixture into fruit mixture; stir in raisins and walnuts. (Walnuts should be coarsely ground but not left so large as to interfere with slicing.) Turn batter into two 9-by-5-inch loaf pans that have been greased and floured or lined with waxed paper or parchment. Bake at 350 degrees for 1 hour, or until cake tests done. Let cool on rack before slicing. Makes two loaves, 10 generous servings each.
