2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 cup sugar
1/2 cup vegetable oil
2 large eggs
3 medium very ripe bananas, mashed
3 Tblsp. milk
3/4 tsp. vanilla extract
2/3 cup finely chopped pecans, optional
Preheat the oven to 350 degrees. Grease a 9x5x3-inch loaf pan.
Sift the flour, baking soda, baking powder, salt and cinnamon into a
bowl and set aside.
Beat the sugar and vegetable oil in an electric mixer at medium speed
for 2-3 minutes or until the mixture is light and fluffy.
Add the eggs one at a time, beating after each addition.
Add the bananas and beat the mixture until thoroughly blended.
Add the flour mixture, stirring only enough to moisten the dry
ingredients and blend them in.
Gently stir in the milk, vanilla extract, and nuts, if used.
Pour the batter into the prepared pan and bake for one hour or until
a cake tester inserted into the center comes out clean. Cool for 15
minutes.
Remove the bread from the pan and let it cool completely on a cake
rack. Makes 1 loaf.
