Autumn Salad With Bleu Cheese

Serves 6.
1/4 cup orange juice
1/4 cup canola oil
3 tbls. apple cider vinegar
2 to 3 packets sugar substitute
1/4 tsp. salt
1/8 tsp. pepper
8 cups chilled salad greens
1 cup diced red apples
1/4 cup crumbled bleu cheese
1/4 cup chopped toasted pecans
1. Combine first 6 ingredients in a jar. Cover and shake vigorously. Chill
to blend flavors.
2. Before preparing salad, chop apples and put a little of the dressing on
the apples to prevent them from browning.
3. Shake dressing again and toss with greens, drained apples and bleu
cheese. Garnish with toasted pecans.
Nutritional analysis per serving: 168 calories, 14 grams fat, 2 grams
saturated fat, 4 milligrams cholesterol and 177 milligrams sodium.
Note: This recipe has 13 grams less fat per serving than the original, but
is still high in fat. Serve with a low- fat meal or omit oil, vinegar, sugar
substitute and salt and use 3/4 cup of a fat-free, low-calorie Italian
dressing.
