CREAM OF WHEAT PUDDING

1 cup skim milk
3 tbsp cream of wheat -- (3 minute red box)
1 egg
1 tsp vanilla
1 tbsp splenda -- (1 to 2)
Heat milk to almost boiling. Be careful as it will burn to the bottom
of you pot. I use a medium sized pot for cooking one serving and if I
am making a larger batch then I use my largest pot.
Beat the egg with the vanilla and splenda, then set aside.
When the milk is heated slowly sprinkle in the cream of wheat while
stirring with a whisk. Continue stirring with a whisk for approx two
minutes until the cream of wheat is almost to the consistency you
like it to be. (I like it to be rather thick)
Then add the egg mixture and stir to mix well. Cook for approx. One
more minute to ensure that egg is cooked.
You can enjoy this hot or cold. I quite often am not able to eat the
full serving at breakfast and so I put the leftovers in the fridge
and have it for a snack or dessert after dinner. It reheats ok in the
microwave.
