Weinmann 2120 650b rims?

I've got a couple 3 cheap Schwinn wheelsets with  Weinman 2120 rims.  Are these rims worth  building up with new spokes and hubs?  Will they run folding tires or would I need a wire bead? Thanks

I would try mounting a tire to them first. They can be challenging to get the bead to seat properly. 

Be sure there aren’t any flat spots or dents. 

Ask me how I know these things...

Depends on how difficult the rebuild is and the intended use.

If you are buying new spokes for the rebuild, buy better rims (Zac19 or CR18, or other cheap 650B rims).
If the intended use is for loaded riding, buy better rims.

Weinmann (ZAC19 included) are notoriously difficult to seat tires on. Use tubeless tape and it may only take 1 or 2 tries.

You can use wire or folding bead with those rims.

I've seen a couple wheel builds with these, including one where the owner had specifically sourced a pair from France, so there are fans out there.  My immediate interest would be to polish these up and use them on a Fuji S-12 fitted with Diacompe 750 centerpulls. I think the extra width will help with the brake leverage a bit, but will have to check clearances to make sure that  rims extra width doesn't add to much width to the 42mm tires I'd like to use.   I'd be inclined to use straight gauge stainless spokes, but  my gut feeling is that  a  lighter  single wall rim might do better with double butted spokes.   I hear the false economy warning, and would probably not use my last nos 7speed  105 hub set on these rims.

Did something happen to make CR-18 rims in the 650b size functional?  The first batch years ago were oversized and made life absolutely miserable.  I built a set.  If there is somebody you really don't like pay for the shipping and I will send them to them.

What rotors are people running?

My wife and I climbed Mt Tam, she on her Gazelle ebike and on the descent, her rear rotor was really hot, too hot to touch (except I did and burnt my fingers :)

Mineral oil doesn't tolerate heat as well as DOT so I'm considering my options. I'm building a GRX gravel bike and I wonder if I load it for touring/packing if the XT rotor Shim recommends will suffice and if I should go full fin road rotors or bump up to 180mm. 

Mainly thinking about heat, and not so much braking power as I any 160mm will suffice, or the "ting ting" song these rotors are given to play after hard braking, as it seems temporary.

I use 180 front, 160 rear on my cargo bike (which carries bigger loads than I hope anyone tours with, but I probably don't do as long of descents since I don't ride it over mountain passes when dropping the kids off at school).

I had serious problems with brake fade on some steep hills (~15% grade) around Seattle and moving to 4-piston calipers made a big difference there.  I'm using Shimano BR-MT520 calipers.  These are compatible with at least any of their flat-bar levers.

I'm not running any fancy rotors, they are just Shimano-Deore quality (so stainless steel, not a laminate).

I've had mixed luck with 203mm rotors (next size up over 180).  They handle more heat, but they also warp more easily because it's a long way from the mounting bolts to the outer edge of the rotor.  If you get one in that size I recommend looking for one with a beefier aluminum spider and then a smaller rotor that is riveted in place.  Magura made one that I used a decade ago to solve my 203mm warping problems.
