May sound like a dumb question but what exactly is the difference
between an SKB File and SketchUp Model?

to Google SketchUp Help - 3D Warehouse
SKB is a backup of the SKP file. If you mess up a model and save it,
you may be able to recover something by renaming the *.skb file to
*.skp and opening it.
