Windows Mail being forced over to a broken 'new' lite version of outlook

Just a heads up,

In Windows 10, (and probably 11 and 8/8.1)  Microsoft
released an update to Windows mail which starts nagging you
to "migrate" to some completely broken light version of
"Microsoft Outlook (New)" if you accidentally hit allow all
attempts to load Windows Mail (which will still be resident
in memory) will instead drop you into a broken "Outlook
setup wizard"  which usually gets stuck demanding server
details and passwords most elderly clients don't know and
will subsequently lock them out of their email entirely.

The short term fix is the installed apps control panel, and
uninstalling "Outlook (new)"  which will remove the redirect
and allow the already opened Windows Mail app to display
emails again, but it will not have a prominent "nag" ribbon
on the top insisting they are forcing everyone to migrate to
outlook 'click here to allow'
