Whipped Orange Sauce

 




3 egg whites
1 cup powdered sugar
2 tbsps orange juice
4 tbsps grated orange peel

In medium bowl, beat egg whites until foamy; gradually add powdered
sugar,
beating until stiff but not dry. Add orange juice and 2 tablespoons
orange
peel; blend well. Use remaining 2 tablespoons peel as garnish.

HINTS: To flame rum in a long handled ladle or small saucepan. If using
ladle on a gas stove, carefully tip the ladle, once the rum is heated and
rum will ignite. If using a small saucepan or an electric stove, it's
best
to ignite the rum, once heated with a long handled match. Pour over the
baked bananas and carefully carry the serving dish to the table. For
drama,
turn the lights down low. Once the flame has subsided, serve and top with
sauce.
