I've been building Juris-M as a FF plugin, but it's nearly ready for testing, and time to build it Standalone.
For a 5.0 Standalone build, should I work from zotero-standalone-build as before, or is there a new build framework for the new series?

Aha. I get it - can answer my own question.
I see that zotero-standalone-build now works on Linux by executing a Firefox binary with an -app option. If I just port my small changes to the script across to the latest version, all should be well.
