Variables not set

When the user use a variable in a filed of a plugin and the variable is not set, the plugin receives just the variable name even if it performs the replacement. In this case it's not possible for the plugin to know if the user used a not set variable or if the user just wanted to use some text like %foo. I ask for a way to know when it happens.
