If tasker is turning it on you should be able to tell why by viewing the run log. Menu / more / run log.

Hard to say without seeing the relevant profile and task descriptions. Could you post those. With a explanation of what you are trying to achieve and where it is going wrong.
To post your profile or task here... Long press on the profile or task name / ( 3 dot menu with 4.0+ ) export / export "DESCRIPTION" to clipboard (not XML)
Any linked tasks will be exported with the profile they are linked to..
To be able to export, The beginner mode needs to be off and the profile needs to be named by you (Not the Tasker listed name. Tasker will list your profile with the context name if you have not given it one).

The clip board option should be in the same menu. See screen shot, the clipboard is the top option in the menu.
I hope is not a problem. I want to make a small, simple night saving profile, but the tasker kills everything as it should, but after some time during the night, it turns on data
Could you post the profile descriptions. Especially the one that runs every 2 min. Your run log only shows about 6 minutes but your every 2 minute profile is running and the associated task is running. It appears to only have one mobile data action.

This can be done more efficiently by not using a global variable and just add a context ( context / state / tasker / profile active (use mag glass to select the night profile) "inverted" to all of the day profiles.
The night profile needs to be named by you (not the default tasker name).

Tasker also provides a variable that contains a comma separated list of all active named profiles. %PACTIVE .
So there is really never a need to set a global variable in a enter task and exit task to use as a flag to determine when a profile is active. You simply need to check for a match in that variable. The match should look like this.
IF %PACTIVE ~ *,Name of Your Profile,*
The *,,* are important because you are matching a comma separated list.
