Motorola MC2100 barcode scanner - application building for capture??

I have just got an MC2100 barcode scanner device to trial as an asset management capture for the roll out of desktop peripherals to every desk in my company, which comes to over 3,500.
The product looks as though it can more than do the job, but I have a small problem...
 
I have no idea how to get a programme built (as in a wizard capture tool), for the desk rollout engineers to follow. This would need to be installed on the device.
 
The capture process would be along the lines of for each record:
 
1. Desk asset barcode (UID)
2. Location asset barcode
3. Monitor 1 asset barcode
4. Monitor 1 serial number barcode
5. Port Replicator asset barcode
6. Port Replicator QR code (optional)
7. Monitor 2 asset barcode (optional)
8. Monitor 2 serial number barcode (optional)
9. Save record and start new line entry.
 
Upon reconnection to the USB cradle, the captured data is passed across to the laptop.
In what kind of format? .XLS .MDB .CSV?
 
I'm lost at where to start with all of this.
There don't seem to be any templates or example files on this process available anywhere.
 
Is there anybody in this Group that has any advice on how I can get this sorted out?
Also, I want to have a solution in place over the next 2-3 weeks!
