My fiance's father and stepmother were in town. I spent a day with them that included taking them to a local BBQ joint. At this BBQ joint the meat is served without sauce, and you add sauce at the table. A variety of sauces was available.

They both chose yeller sauce.

Is the wedding off? Or are they just ignorant, being from Illinois?

get a pellet grill and make your own bbq....that's what I did and it is 40x better than any bbq joint. Even the 'famous' ones including one here in Tuscaloosa.

I stopped going out for bbq the day I got a pellet grill....

Except when I lived in augusta, ga during med school there was one famous bbq place and it was called sconyers and it was damn good...but Im not driving 4+ hours for it.

It's run by Floridians transplanted to NC. They are trying to stay sauce-agnostic.

we use red sauce most commonly, then white sauces are next(a couple big chains use this most commonly), and then yellow sauce a distant 3rd(but you can get it some places)

Three recipes for yellow BBQ sauce.

-----------------

Gent's father's recipe
3⁄4 cup yellow mustard
3⁄4 cup cider vinegar
1 tablespoon light brown sugar
1 1⁄2 tablespoons unsalted butter
2 teaspoons salt
2 tablespoons Worcestershire sauce
1 1⁄4 teaspoons fresh ground black pepper

Not all barbecue sauces are red. In fact, one of my favorites
comes from South Carolina, and is a bright yellow, mustard-based
sauce that is every bit as delicious as a vinegar or tomato-based
sauce. Yes, I know such things are blasphemy in the Barbecue
Belt, where your local style of BBQ is the only true one.
Fortunately, I am from New Jersey, where we don’t really have an
indigenous barbecue. That leaves me free to enjoy them all.

4 Tbsp. butter
1/2 onion, grated
Onions sauted in butter
1/2 cup yellow mustard (the kind you get at the ballpark)
1/2 cup brown sugar
1/2 cup cider vinegar
1 Tbsp dry mustard (like Coleman’s)
1 teaspoon cayenne
1 bay leaf
Salt to taste

Gettig to the Indian curry realm

1/2 cup yellow mustard
1/2 cup orange juice
1/2 lime, zested and juiced
1 scotch bonnet chile pepper, minced
1 tablespoon brown sugar
1 teaspoon ground cinnamon
1 teaspoon curry powder
1 teaspoon salt
1/2 teaspoon ground cumin

dreamland, full moon(which sucks and I never go there) and saws are the three most popular here and none do yellow sauce. Saws is best known for white sauce. Miss Mryas, the last time I was there, had yellow sauce as an option. Although you had to ask special for it or you will get red

I added directions to your recipes.

Dreamland sucks.

Every Bammer I know talks about Dreamland. Most haven’t been there and it’s not even the best BBQ in Tuscaloosa.

It's not all that great as bbq(although much better than full moon) and saws is much better, but the original dreamland is iconic at the very least...when you think of southern bbq and all the lore that goes with it, perhaps no single place better represents it in the entire country than the original dreamland shack in tuscaloosa....
