Everything was great, but you can't fry clams. You just can't. Next time, boil, bake, steam, stew, but you just can't fry clams. They're texture just isn't edible.

I've never had fried clams before. I did have some fried oysters last night - along with some fried chicken and curry. I could only eat one oyster. After eating one, I feel a little ill. :)

Don't let your Red Lobster experience put you off on good fried clams.
Cooked right, it's the best way to eat them, imo.

Most restaurants use the large chowder clams and cut them into strips to
be battered and fried. The large clams cost less.

Those large clams are tough to start with and all you get is clam
flavored breading on thin clam strips.

For good fried clams, buy the smaller more expensive ones. Buy them live
and open yourself with a knife.

Then batter the WHOLE clam and deep fry in very hot oil. As soon as the
breading gets browned, the clam is done. Only takes a minute or two to cook.

Try it that way and you'll love them. Very juicy and tender along with a
bit of browned batter.

They're also decent steamed in shell just until the shell opens. Or
opened with a knife to make clam chowder.

The same also applies to fresh oysters.

Clams and oysters are eaten raw, too. I like clams and tomato sauce over italian noodles. I like fried oysters, though.

I think Japanese style fried oysters are great but I can only eat 1 or so. Sometimes I'll eat one and a half and give my wife a half. I have to be really hungry to do that. I love the stuff but am repulsed by it at the same time. That's pretty nutty alright.

I've never had cold rice with oysters wrapped with a little sea weed. With a green horseradish and soy sauce mixture, that should be good.

properly done they are great.

overdone they're chewy, still edible, but that's just me...

how you can tell i find them edible is that i won't eat them with
any other thing on them. once you see me reaching for the cocktail
sauce or tartar sauce then i don't think they're very good. same
for most fish or other seafoods. if i can eat them plain or with
just a bit of garlic butter then you've done a good job in prep.

Frozen is good too. Frozen cod, thawed, breaded and fried, American
style, rather than British, and with lemon or lime, rather than malt
vinegar, but then we'll be watching old episodes of Gardeners' World.
I'm cutting up the fish first, so I'll be frying cod pieces. I put
the fried fish in a bowl, rather than on a plate--a fish bowl.

Right after I sent this, I remembered that my niece, Jerry's daughter,
used to call Red Lobster, Red *Lompster*. She mispronounced other
things too, in ways that I found funny. She called cicadas, which many
here refer to by the misnomer, "locusts," "fokiss," clearly a short "i"
sound rather than a schwa, and she called giraffes, "drath." It wasn't
that she was unable to pronounce any consonant or vowel sounds. As Art
Linkletter pointed out, "Kids say the darndest things."

I agree. Much seafood is stand alone good or with minimul seasoning.

I used to make cocktail sauce for shrimp. It's good but it overpowers
the taste of shrimp. I like it plain so I quit making cocktail sauce for it.

I've done slightly steamed clams and mussels. Not quite raw but barely
cooked.

Put them in a pot and with a tiny bit of white wine and lemon. Turn on a
high flame and cover the pot with a lid. As soon as they open, they're
done, tender and delicious.

I think the best sauce for shrimp is Lobster Sauce... doesn't over
power the flavor of shrimp and in fact it enhances the shrimp flavor.
Very easy and quick to prepare and there's no lobster involved. I
make it often and it doesn't need shrimp... Lobster Sauce is my
favorite sauce for Fly Lice... Shrimp with Lobster Sauce is a classic
Chinese restaurant dish, every Chinese restaurant serves their version
with only slight differences. When I do Chinese take out I usually
order a container of Lobster Sauce; goes well with chicken, pork, most
everything, it's how I eat the freebie white rice and crispy noodles.

Not very workable for cold shrimp, though.

I make a thin cocktail sauce and I don't load up the shrimp. I
can taste both the shrimp and the sauce.

Cold shrimp can easily be reheated in the lobster sauce... dump the
shrimp in once the lobster sauce is done and coming off the heat, no
need to heat the shrimp to boiling, heated through is enough. I
reheat all sorts of foods... in fact tonight's dinner will consist of
reheated pork chops... Birdseye Steamfresh sells various veggie
mixtures with a sauce frozen in a two portion amount in a plastic bag.
After nuking the veggies cut a slit in the bag to add the meat for
reheating from the steam while sipping your vino. Birdseye veggies
are very good quality, usually better than so-called fresh from your
produce market... no work whatsoever. Birdseye are fresher than from
your market because they are processed in the field in factory
trailers. Birdseye brings their factory right to the growing
fields... only growing your own can be better.

I buy shrimp frozen in 2lb bags and only cook enough to eat at the time.
Occasionally I will save enough to make a sandwich then next day.

I buy shrimp in either 1- or 2-pound bags (depending what I find at the
store when I'm ready to buy). I cook perhaps two servings.

My go-to recipe for leftover shrimp is on a salad with lime vinaigrette.
Extra points if I have fresh poblano chile and ripe avocado to slice
up onto the salad.

Had some awesome ones last night. Cherry Stones. Don actually simmered
them to barely open then served with butter.
