How to use different error_logs for different applications in Nginx + Meteor Setup?

I have three different nginx server configurations for different meteor applications. I would like to use different error_logs for them. I have seen the passenger_log_file option here: https://www.phusionpassenger.com/library/config/nginx/reference/#passenger_log_file

But if I am not mistaken, it cannot be applied inside the server block?

How would I achieve different logs for my meteor logs?
