I'm not sure how familiar are you with recent development, but macFUSE4 is in pre-release which not only supports Big Sur but also Apple Silicon Macs.

Afaik, OSXFUSE3 still works on Big Sur however it does not support Apple Silicon.

Also, the license for using osxfuse/macFUSE has changed. More details here.
