Maybe you are using this already with your enclosure, but I've used waterproof cable connectors for cables entering enclosures. One connector per cable and you should find ones with a flat gasket to insure a good seal with the enclosure wall. Alternatively you can use some silicone sealant for the seal to the enclosure wall.
I've also used silicone conformal coating on PCBs and I use a hair dryer to accelerate drying. Ideally wires would be soldered right to the board.
At times when I needed connectors to the board, I've used ones with gold plating/flashing with care exercized in not getting the coating onto contact pins. Ideally in-line waterproof connectors can be used within the enclosure with wires again soldered right to the board.
If you have a crystal on the pcb or any other high-impedance circuits you want use a potting or silicone coating meant for electronics with low conductivity and low water adsorption properties.
I would think between the conformal coating and the enclosure you should be fine.
