For Thunderbird, the software ID is
3550f703-e582-4d05-9a08-453d09bdfdc6. For the AdBlock Plus extension,
the ID is d10d0bf8-f5b5-c8b4-a8b2-2b9879e08c5d.

What is the source of these IDs? How are they assigned?

They are just randomly generated using any of the many many uuid utilities
available e.g. https://www.uuidgenerator.net/
