On your health care professions/health care student interview skills mLearning project:
It is quite an extensive mLearning project, for it can be broken down in many aspects: raising student awareness on which jobs there are (job descriptions as you mention, possible witnesses on the different jobs - preferably old students - this always rings well with students and gives a good look at the quality of the school), organizing all the current jobs (makes me think of an RSS type of automation, otherwise it will be tough to keep updated), and the interviews the students themselves produce in the setting of their future preference (auto-produced, but with the potential of being used in future course runs).
I read that your health institution is not yet fully connected? It might be a good introduction to the school management to see what extra interest is generated by your project (in terms of promotion, support for getting your students into the 'real world' ...
Creating a hub is very important and from an IT point of view, you must make sure it has enough space for multiple student access at the same time (you need to make sure you engage the IT department or people from your school very early. I know from my own experience that it makes live much more easy - spoken from IT part of my job). This coincides with the problems you list. Get them in, and those problems will be decreased.
Another potential problem might be the cost to the student: streaming video can be expensive, so better put out a strategic policy that can help set out guidelines or best practices. For example, if your school has overall wifi access, ask your IT people if they can allow a student mobile access point to be created, based upon their MAC address. This will allow students to access information one's they are in school, through single click on the wifi on their phone. But saying this, it also means that you must be certain ALL students have a wifi enabled, internet accessable phone.
Than on your elderly mLearning project
ah, before I forget (remark also of importance to previous project), you mention google group as a means to organize the interviews, I do not think that is ideal. A wiki might be better, or even youtube (for videos) as this is very accessible to mobile devices (more than wikis) and it is a youth thing to visit. Or you could think about Vimeo, which is similar to Youtube, but has better security options (to make it private, or for group, or from location accessible...).
Not sure how your school is organized, or which types of skills are taught, but if you gather all those wonderful narratives from the elder, you might want to join hands with other disciplines: for editing movies... or partner up with multimedia school nearby to edit the stories (just a wild idea). Or join hands with researcher from a university nearby, that way the narratives become part of the community and can be shared through history. Or join hands with the city where your school is located to get some funding, and embed your students activity into a creative mobile project supported by the city.
... oh well... dreaming never hurt anyone :-D
