See the mirt.model() function for examples of how to specify these types of models. I'm sure there's a number in the package documentation as well, just check the help files. 
 

In simdata codes, can we generate multidimensional polytomous response patterns from real data?

Yes. At least I think yes; I'm not 100% sure I understand the question. You can generate response patterns from a model, which look like they are real data.
