I am looking for software that would allow me to download parts of my
favorite websites for offline browsing.

This is PowerShell newsgroup, so you must direct your question to another
group. But you may check Teleport Pro or Offline Explorer.

Already answered in IE General.

What is your OS?

In XP you can still use Windows Explorer with
%windir%\Offline Web Pages

It might be relevant in this newsgroup to ask about automating using that.
