The fastest way I know of to do the Paste Special> Transpose is to assign a
keystroke to Paste Special. When the dialog opens key Shift+Tab (which
selects Transpose), press Spacebar to check it, then press return.

For the Operation section:
Cmd-A does Add, Cmd-S does Subtract
Cmd-B does Skip blanks.
If the missing ones have keys I haven't been able to find them.

Keyboard Shortcuts... If it's set for 'Text boxes & lists only' the tab key
does nothing. The option needs to be selected for 'All controls'.
