I just bought a second from top of the line food dehydrator for my wife. (none of the Excalibur's were available)  It works great but it is going back because it is insanely noisy.  And I just read up,  and all the models with fans are noisy (even the Excalibur)  and end up in the utility room or garage of owners instead of the kitchen.   Quiet comes at an over $400 price when you buy the "sausage maker" brand.       So!   Anyone want to design a diy version?  excalibur is about 300 watts, mine was 1000 watts and apparently they both dry around the same speed.  So,  anyone want to design something based on a computer fan and  a little heating element?  We don't need an electric car fan in the kitchen! (but that is what it sounded like!)   Probably a great thing to put on instructables or on youtube right now.  Mine had 4 trays but apparently it can dry up to 30 trays!  So clearly,  there is no need for a "30 tray fan"  if you are only drying 4 trays of fruit at a time.  Thanks Brian.

a family member had a homebrew one that used a light bulb as the heating element. I don't remember it having a fan, but I do remember it burning what was ever on the bottom two racks. you really need to shield the fruit from the radiated heat.
The other thing was window screen is usually coated in a fungicide, so you can't buy screen material for it at home depot
