Can anyone recommend good LMRI training resources for instructional designers who don't work frequently with coding?

Hello Peter, I am not aware of much by way of material specifically designed for training but (with apologies for the blatant self publicity), these are all attempts to explain the thinking behind LRMI. All these are licensed as CC:BY (except for the video) so feel free to incorporate them in your training materials, with a note to say where you got them.
