What even is the difference between ko'a, ko'e, ko'i, ko'o, and ko'u?

Nothing. They are just available so that you have several variables to use for assignments.

  To amplify, just think of it as the word "she (or he, or it)".  That causes all kinds of trouble in English like -- "Tony was Jack's father.  He wears bright red pants.  Yesterday went with Mary to the store"  Care to guess which person the "he" is talking about in sentence two?  How about sentence three?  The same?  Different?  Well, lojban offers you a way to disambiguate those references with 10 different flavors of he/she/it (really many more, since you can use letterals or any arbitrary label at all).
