I've already selected some organizations and some of their projects but how I begin working on their projects also I've some question which are:
Does these organizations change in every GSOC and what about their projects do they change too ?
How do I familiarize myself with all the work they have already done ? I mean how do I catch up....???

Thank you

Every year there are about 20-25% new orgs participating and about 75-80% are orgs that have participated in the past. But just because an org participates this year doesn't mean they will participate in 2018.

You can look at the organizations participating this year - or look at the archive for orgs that have participated in the past and the student projects. Then you can find organizations that look interesting based on your skills and general interests.

You can look at past projects and can always go on the org's various chat group channels (could be IRC, Slack, etc.) and hangout there to see the conversations going on.

Also be sure to read the relevant pages on in the GSoC Student Manual to help you prepare for a future program.

Best,
Stephanie
