Wrapping my head around this

Hello y'alls

I am a property inspector trying to automate my systems. My most basic need that lead me to ultradox was the ability to provide automated quote generation and distribution from a form on my website to prospective clients. Coupled with Microsoft Office dumping features that I need, which google docs and sheets provides (like taking photos with my tablet directly from a sheets or docs file), I said to myself "Self, we should evaluate using these google apps for all the processes... inspections checklists integrated to report templates triggering distribution, automatic follow up to check on the client, automatic follow up requesting reviews. Who knows."  

I get the gist of the program but am struggling in implementation. I am technically proficient... for a contractor lol.. I have given this a solid 10hrs of effort with no results.

Is there a certain level of proficiency I should have to use this program? I have read and watched all of the available support information (at least twice) and still do not understand the basic fundamentals of controlling this system. There are several things I do not understand. 

1. What does each block actually do? The "core" blocks seem cool. No idea of most of their functions. Why is there an input function that brings up another form? Why is output different? What is a webhook? 
2. How do I do cool stuff... I ran into a problem getting the pdf to take input from a spreadsheet's last row and being triggered by that  (the google sheet is autofilled by my website's form). I found a conversation here (https://groups.google.com/d/msg/floreysoft/Psz0N1O7Bz4/5Z-CccQZBgAJ) in which someone provided some awesome script code stuff. No idea what to do with that. 
3. What is batching. That seems to have something to do with item 2.
4. In general, how do I know what codes/functions/scripts to run. I do not know the difference between those words. What I means is, the user guide has example if writing something like ${insertcool stuff here===awesomeness+morestuf} and cites that like it is common sense. Am I supposed to know html or something. The guide said JSON was common, looked it up and was immediately confused. 

If anybody who suffered with learning the core concepts of using this app has any advice, it would be greatly appreciated!! I am not as dense as I may be seem from this message and am willing to learn.
