Watershed mapping

Does anyone know if there are methods in R to map watersheds using digital elevation maps like you woulf in ArcGIS?

Yes!

Best starting place IMO is Hijmans' raster package  http://cran.r-project.org/web/packages/raster/index.html (check the vignette).

You'll also need gdal/rgdal to deal with projections.
