updated Kernel packages on my Debian stable machine via/through SSH2
remotely, but it got stuck:

What do I do? I am worried to ^C (will have to do this in about an hour
since I need to log off) and reboot. Has anyone run into this
before/too? I never had this problem before. :( Thank you in advance. :)

That is consistent with it bombing looking for memtest86, which is only
ever looked for by grub update.

you should be able to run the grub update by hand with a console login

Or hand edit grub.cfg to get a bootable suste,

However, adding "GRUB_DISABLE_OS_PROBER=true" line to the bottom of
/etc/default/grub fixed it! I haven't tried rebooting yet though! :/
