I have checked previously published questions relating to this area but they appear to have got off topic before resolving the issue.  I apologise if this going over old ground.

How can I alter the BlueGriffon configuration so that the default setting for images and links are for relative addressing and not absolute addressing?

I use Linux and have my website on a local but separate machine and I access it through NFS so the file paths are  plain and simple. Yet BG defaults to "absolute" all the time and yet resolves the issue cleanly when the "relative" option is ticked.  So it can do it.  Very few of my images ever require absolute addresses, and the majority of links are local as well.

Any suggestions please?

I agree. Relative addressing should be the default. Don't think I have ever used absolute addressing and it is too easy to miss the tick box and end up with a mess.
